Waffle Recipe
So I have been making waffles for a few years now off and on. I use Kodiak Cakes brand because nutrition-wise, there’s just a lot more protein and a lot less sugar. But I always had an issue with them sticking. Until now!! A recipe for a single waffle. Use a digital food scale, it makes life so much easier and it’s a way more accurate way to cook when you have dry ingredients. I personally use grams. If you use a different unit, you can convert it for your own use.
- 53g waffle mix
- 88g filtered water
- 7g olive oil
- Butter with brush for the waffle maker
Combine all ingredients. I use a protein shaker cup, perfect for me, mixing the ingredients with a chop stick. Why not? Sometimes I’ll add just a touch of vanilla extract and/or cinnamon. Pre-heat your waffle maker. Do not use a light oil or cooking spray like Pam, or avocado oil , coconut oil or anything similar. Something about light oil cause the waffles to stick to the grid and you’ll be scraping it off. Just dip a brush in butter and apply it to the waffle maker. Then pour it on the waffle grid. Don’t close the lid right away. Leave the lid open for about 20 seconds and then close it.
I timed it to about 3 minutes before the waffle was done. You’ll know it’s done because the waffle maker will open with ease and almost no resistance. These will be a good firmness, crispy, you can honestly eat these by itself. Do you have any suggestions? Do you have a better experience with using light oil for making waffles?
